Pavlova

Meringue ingredients:

- 4 large brown eggs WHITES, i use it straight out of the fridge so personally i dont let wait for it to be room temp.

- 225g of white sugar, sifted (dont hate me idk how much it is in cups but trust, buy yourself a scale....less dishes and more accurate)

- 1/2 tsp cream of tartar

- pinch of kosher salt

- 1 tsp vanilla extract

- 1 1/2 tsp cornstarch 


Filling ingredients: 

- 360 mL heavy whipping cream

- 1 tbsp vanilla extract

- 1/4 cup powdered sugar 

- whatever fruits you want on top 

(if you want the blue whip cream, i add 1/2 tsp of butterfly pea powder)



Step 1 : Preheat your oven to 300F

Step 2 : In a large bowl, add in your egg whites and use a hand mixer on low/med speed. Add in 1 spoonful of the sifted sugar at a time (this usually takes me like 20 mins ._. ) until soft peaks form. 

Step 3 : Add in pinch of salt and cream of tartar and mix again until youo get stiff peaks (if you can turn the bowl upside down and it wont fall, you're good)

Step 4 : Add in vanilla extract and mix until combined.

Step 5 : Add in cornstarch and FOLD it in with a spatula. 

Step 6 : Transfer into a piping bag and pipe onto parchment paper on your baking tray. Once done, grab a spoon and using the back of the spoon, push it down in the middle slightly and lift up to create a dent. 

Step 7 : Place baking tray in oven and immediately drop the temp to 250F and bake for 1hr and 15 mins. 

( DO NOT UNDER ANY CIRCUMSTANCE OPEN THE OVEN DOOR GIRL)

Step 8 : Watch a movie, do a chore, take a nap or read the bible while you wait for it to be done baking. 

Step 9 : Once it's done (DO NOT OPEN THE OVEN DOOR) turn it off and let rest inside of the oven for 3 hrs. pls pls pls dont open the oven door, if you want to look at it, look thru the glass...


FOR FILLING :

Step 1 : In a large bowl, add in heavy whipping cream , vanilla extract, and powdered sugar and using your mixer, mix on medium speed for about 10 mins until it looks like cheese curd lol. Click here if you want the tiktok video i made.

Step 2 : Transfer to piping bag and leave it in the fridge until your pavlovas are done so you can use.

Step 3 : ENJOY! Sometimes while i wait for the pavlovas, i'll just slice bananas and eat it with the whip cream.
